Food & Wine Recipe of the Week: Vegetable Arepas With Miniature Vegetables and Black Bean Corn Relish

One of the newest creations our Food & Wine Festival chefs served up this year are the vegetable arepas with black bean corn relish. Talk about flavor, flavor, flavor! Assembling these delicious patties is simple and we’ve shown you how to do it. Take a look.

Arepa Ingredients:

  • 1 1/4 lbs. corn harina
  • 32 oz. water
  • 5 oz. shortening
  • 2 oz. olive oil
  • 8 oz. diced white onions
  • 8 oz. roasted corn
  • 1 tsp. salt
  • 1 tsp. pepper

Arepa Directions:

  • Mix corn harina, water, shortening, onions, corn, salt and pepper in large mixing bowl until it turns into a dough-like consistency.
  • Make 2 oz. patties and pan fry them in olive oil.

Chimichurri Ingredients:

  • 2 oz. olive oil
  • 4 oz. canola oil
  • 2 garlic cloves
  • 1/4 tsp. cumin
  • 1/4 tsp. crushed red pepper
  • Salt and pepper (to taste)
  • 1 oz. red wine vinegar
  • 2 bunches parsley
  • 1 bunch cilantro

Remaining Directions:

  • In a blender, combine olive oil, canola oil, garlic, cumin, crushed red pepper, red wine vinegar, parsley, cilantro and salt and pepper to taste.
  • Place prepared arepa on plate, top with pan-seared vegetables of your choice, and drizzle with chimmichurri.

The Busch Gardens Food & Wine Festival takes place for an extended nine weekends, starting Saturday, March 4 and runs through Sunday, April 30. The event is included with any Annual Pass, Fun Card or daily admission to the park. Food and beverage is not included with park admission and is available for an extra fee.
